Vegetable Beef Soup

- 1 lb. beef stew meat, cut into bite size chunks shopping list
- 1 (28 oz.) can whole tomatoes, roughly chopped shopping list
- 2 red potatoes (skins on), cut into bite size chunks shopping list
- 1/2 C. frozen crinkle cut carrots shopping list
- 1/2 C. frozen cut green beans shopping list
- 1/2 C. frozen whole kernel corn shopping list
- 1 yellow onion, cut into wedges shopping list
- 2 cloves garlic, minced shopping list
- 2-3 C. water shopping list
- 1tsp. worcestershire sauce shopping list
- 1 tsp. dried basil shopping list
- 1 tsp. dried thyme shopping list
- 2 bay leaves shopping list
- salt and fresh ground black pepper to taste shopping list
- 1/2 C. frozen peas shopping list
How to make it
- Heat a 6-8 qt. pot over medium-high heat.
- Add just a little oil, and brown meat on all sides.
- Add all ingredients but peas.
- Bring to a boil.
- Cover, reduce heat and simmer for at least 30 minutes.
- Add frozen peas the last 10 minutes of cooking.
- I like to serve this with a nice crusty bread.
