Ingredients
  • 1 Tbsp sherry
  • 2 tsp Vegetable Stock Powder
  • 1/4 cup plum sauce
  • 2 tsp oil
  • 500 g pork steak, sliced
  • 2 tsp oil, extra
  • 2 tsp grated fresh root ginger
  • 1 garlic clove, crushed
  • 1 onion, cut into wedges
  • 2 cups broccoli florets
  • 1 red capsicum, sliced
  • 1 carrot, thinly sliced
  • freshly ground black pepper

Directions
  1. Combine sherry, stock powder and plum sauce. Set aside.
  2. Heat oil in a large frying pan, add pork and brown over high heat. Remove from pan. Set aside.
  3. Heat extra oil to pan and reheat. Add ginger, garlic and onion. Cook, stirring for 2 minutes. Add broccoli, red pepper and carrot. Cook, stirring over moderate heat for 2 minutes. Add sauce mixture and pork. Cook for a further 2 minutes, stirring or until the pork is cooked and the vegetables are tender. Season with black pepper. Serve on rice
