Classic Chicken Parmesan Recipe
This is the classic version of a popular dish, you can make for one or 50.. here I am describing it as I do it for myself. It is an easy classic and the best in comfort foods. Whenever I want to spoil myself THIS is it!

Ingredients
  • 1/2 boneless skinless breast of chicken, butterflied and pounded no more than 1/2 inch thick
  • a little buttermilk or regular milk or yogurt or water
  • scant 1/4 cup seasoned or sourdough bread crumbs
  • 2 T parmesan
  • s&p
  • 1 c marinara (homemade is best, but bottled works, too)
  • 1/4 c or so shredded mozzarella
  • Extra virgin olive oil
  • more parmesan as needed

Directions
  1. Heat oven to 400 degrees
  2. mix crumbs, parmesan. S&P put asied ina flat dish or plastc bag
  3. pound chicken and dampen with milk or whatever
  4. liberally dredge in crumb and parm mixture, patting it wherever it needs help sticking
  5. heat a small ovenproof saute and put in enough olive oil to
  6. brown chicken on both sides
  7. remove chicken and add half the marinara to the pan
  8. replace chicken and top with remaining sauce
  9. top with mozzarella and more parmesan
  10. put into oven and bake until cheese is bubbly
  11. slide entire pan contents to a plate (try to keep it all intact) and ENJOY!!!
  12. If you are preparing this dish for more than one, prepare a baking dish to fit chicken with a liberal coating of olive oil and marinara etc, and bake for about 20 or so minutes. If it is for just two, use a bigger saute pan, big enough for all the chicken pieces to lie flat.
