Corn Bread Southern Style Recipe
A tried and true recipe, the corn bread is good alone, with tea, toasted. Supposedly this recipe had its origin at a Disneyland restaurant but I cannot confirm that. Wherever it came from, it is really good. It would also make great muffins.

Ingredients
  • 2/3 Cup Sugar
  • 1 teaspoon Salt
  • 1/3 Cup Shortening (Crisco)
  • 1 Teaspoon Vanilla
  • 2 Eggs
  • 2 Cups Flour
  • 1 Tablespoon Baking Powder
  • 3/4 Cup Cornmeal
  • 1 1/3 cup Milk

Directions
  1. Spray an 8x8 or 4x12 baking pan with Pam Spray.
  2. Heat oven to 400 degrees.
  3. Combine sugar, salt, shortening and vanilla and mix for about 5 minutes.
  4. Add eggs one at a time and beat for another 5 minutes, scraping down the sides of the bowl as needed,
  5. Sift flour, baking powder and cornmeal.
  6. Add about half the flour mixture and half of the milk and continue to beat.
  7. Add remaining flour mixture and milk and beat until smooth.
  8. Place mixture in pan and put in center of oven.
  9. Bake for about 25-30 minutes or until tester comes out clean.
  10. Cool and enjoy!
