This recipe is very easy to prepare and is delicious! During the holidays I make several mini-loaves and give to neighbors, mail-carrier, and co-workers.

Ingredients
  • 3 large well-ripened bananas, mashed
  • 1 egg
  • 1 stick of butter, melted
  • 1 1/2 cup of flour
  • 1 cup of sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup nuts, optional (I use whole pecans and set on top of bread. This causes the pecans to toast and gives the bread an added kick)

Directions
  1. Mix all ingredients in a mixing bowl; pour into a well greased loaf pan.
  2. Bake at 350 for about 60 minutes, or until knife or toothpick inserted in middle comes out clean.
