Totilla Casserole Recipe
The 'heat' factor of this delicious casserole can be lowered by using plain Monterey Jack cheese in place of the Pepper Jack. We like the flavor combination of the hot pepper jack cheese, and the sour cream, though.

Ingredients
  • 2 cups coarsely chopped cooked chicken
  • 1 (10.5 oz ) can black beans, drained and rinsed
  • 1 (4 oz) can chopped green chilies, drained
  • 1 medium-sized green bell pepper, cored, seeded, and chopped
  • 1 medium-sized red bell pepper, cored seeded and chopped
  • 1 (10 oz) package Pepper Jack cheese, shredded
  • 8 (7 inch) flour tortillas
  • 1 cup sour cream

Directions
  1. Preheat oven to 375F. Mix the chicken, beans, chilies, green pepper, red pepper, and cheese in a medium-sized bowl. Spoon an equal amount of the mixture into the center of each tortilla, then roll up tortillas.
  2. Place the filled tortillas in a greased 13 x 9 x 2 inch baking dish. Spoon sour cream over the top of tortillas. Bake, uncovered, for 10 minutes or until heated through. Serve hot.
