Vegetarian Bulgar Chili Recipe
I was unhappy with all the recipes I found- so I made this one! Use whatever veggies you have and spice it up as much (or as little) as you want! This is hearty and healthy!

Ingredients
  • 1 can beans (your choice- I used a mix) drained
  • 1/4 cup bulgar
  • 1 T olive oil
  • 1 C chopped onions
  • 3 cloves garlic
  • 1/2 C peppers (I used red)
  • 2 jalepenos (with out sees and diced)
  • 1/2 C diced carrots
  • 1/2 C diced zucchini
  • 1/2 C diced yellow squash
  • 1/2 C cauliflower
  • 1 can tomato sauce
  • 2 T cocoa powder
  • 1 C water
  • To Taste:
  • Cumin
  • Cayenne Pepper
  • Chili Powder
  • Paprika
  • Salt/Pepper
  • Hot sauce

Directions
  1. In a large skillet (or stock pot) , sautee the onions, peppers, jalepenos, and garlic until soft
  2. Add in the rest of the vegetables and continue to cook
  3. When vegetables are soft, begin to add just a pinch of each seasoning
  4. Add the tomato sauce, cocoa powder, bulgar, and beans. Bring to a boil and add the rest of the seasonings.
  5. Add part of the water. How much water you use depends on how thick (or thin) you like your chili. The bulgar will soak up most, so you might need to keep adding.
  6. Once the mix boils, turn down heat and simmer for at least and hour (I let mine go for two)
