Vegetarian Bulgar Chili

- 1 can beans (your choice- I used a mix) drained shopping list
- 1/4 cup bulgar shopping list
- 1 T olive oil shopping list
- 1 C chopped onions shopping list
- 3 cloves garlic shopping list
- 1/2 C peppers (I used red) shopping list
- 2 jalepenos (with out sees and diced) shopping list
- 1/2 C diced carrots shopping list
- 1/2 C diced zucchini shopping list
- 1/2 C diced yellow squash shopping list
- 1/2 C cauliflower shopping list
- 1 can tomato sauce shopping list
- 2 T cocoa powder shopping list
- 1 C water shopping list
- To Taste: shopping list
- cumin shopping list
- cayenne pepper shopping list
- chili powder shopping list
- paprika shopping list
- salt/pepper shopping list
- hot sauce shopping list
How to make it
- In a large skillet (or stock pot) , sautee the onions, peppers, jalepenos, and garlic until soft
- Add in the rest of the vegetables and continue to cook
- When vegetables are soft, begin to add just a pinch of each seasoning
- Add the tomato sauce, cocoa powder, bulgar, and beans. Bring to a boil and add the rest of the seasonings.
- Add part of the water. How much water you use depends on how thick (or thin) you like your chili. The bulgar will soak up most, so you might need to keep adding.
- Once the mix boils, turn down heat and simmer for at least and hour (I let mine go for two)
