a different squash recipe. I'm not a sausage fan, but this was good.

Ingredients
  • 2 medium acorn squash
  • 1 pound pork sausage
  • 1/2 cuup chopped onion
  • 1 egg
  • 2 T milk
  • 1 cup chopped spinach, finely chopped
  • 1 1/2 cup soft bread crumbs
  • 1/2 cup dried cranberries

Directions
  1. cut squash in half; remove seeds
  2. place squash cut side down in microwave dish
  3. cover and microwave on high 10-12 minutes or until tender
  4. crumble sausage in skillet, add onion. cook over medium heat until meat is no loner pink, drain.
  5. in a bowl, beat egg and milk, stir in spinach, crumbs, cranberries, and sausage.
  6. turn squash cut side up.
  7. stuff with sausage mixture. cover and microwave on high 2 -3 minutes or until heated through.
  8. (I like to put them in the oven, and bake at 350 degrees along side of the meat dish I have in the oven)
