Ube is purple jam that's usually sold in wet markets. Cooked into this sweet jam, it is a traditional gift in our province during holiday season. It is also often served during town fiesta. 100% lutong pinoy!

Ingredients
  • 1 - kilo fresh ube (purple jam)
  • 11/2 - cups sugar
  • 3 - cups milk

Directions
  1. Peel the ube and boil until tender. Grate or mash enough ube to make 3 3 cups. Put mashed ube into a heavy saucepan or wok.
  2. Add the sugar and the milk. Mix well. Cook over low heat, stirring constantly to prevent scorching.
  3. Cook until thick and of even texture, about 30 minutes or so.
