Sweet Potato Pecan Pie Recipe
I love sweet potato pie...the addition of the pecans on top just makes it more yummy

Ingredients
  • 3 sweet potatoes
  • 1/2 cup butter
  • 1 T vanilla
  • 2 1/2 cups sugar
  • 1/2 tsp nutmet
  • 4 eggs
  • 3/4 cup evaporated milk
  • 2 unbaked 9 inch pie crusts

Directions
  1. bring a large pot of water to boil. add sweet potatoes and cook until tender but still firm, about 30 miinutes
  2. drain, cool, peel and mash.
  3. preheat over to 350 degrees
  4. in a large bowl, combine potatoes, butter, sugar, vanilla, and nutmeg.
  5. in separate bowl, whisk together eggs and milk. blend into potato mixture.
  6. pour into pie shells and bake in preheated oven for 60 minutes or until knife inserted in the center comes back clean.
