How to make it

  • In a large skillet cook tortillas in the chicken broth until golden.
  • Remove and set aside.
  • Add onion to skillet and cook until tender.
  • Drain tomatoes and reserve liquid.
  • Add liquid to the skillet then cover and heat on low for 3 minutes stirring occasionally.
  • Stir in tomatoes, meat and pepper and heat through.
  • Reduce heat to low then add tortilla and eggs.
  • Cover and cook 6 minutes then sprinkle with cheese.
  • Cover and heat until cheese melts.
  • Serve immediately.
