Mexican Eggs in Tortilla Blankets

- 3 corn tortillas cut in 2 inch strips shopping list
- 3 tablespoons chicken broth shopping list
- 1/2 cup diced red onion shopping list
- 14-1/2 ounce can stewed tomatoes shopping list
- 1 cup shredded white chicken or turkey meat cooked and skinned shopping list
- 1/2 cup green pepper strips shopping list
- 4 eggs beaten shopping list
- 1 cup pepper jack cheese grated shopping list
How to make it
- In a large skillet cook tortillas in the chicken broth until golden.
- Remove and set aside.
- Add onion to skillet and cook until tender.
- Drain tomatoes and reserve liquid.
- Add liquid to the skillet then cover and heat on low for 3 minutes stirring occasionally.
- Stir in tomatoes, meat and pepper and heat through.
- Reduce heat to low then add tortilla and eggs.
- Cover and cook 6 minutes then sprinkle with cheese.
- Cover and heat until cheese melts.
- Serve immediately.
