Ingredients
  • 2 cups (approx.) of fresh cherries halved and pitted
  • 6 plums, quartered and pitted
  • juice and grated rind of a juicy orange
  • 1/4 cup of caster sugar
  • 3 tablespoons orange liqueur Cointreau or Grand Marnier
  • 1 cup milk
  • 1/2 cup flour
  • 1/2 cup of sugar
  • 3 large eggs
  • 1 teaspoon vanilla essence
  • 1/2 cup raspberries
  • 1/2 teaspoon cinnamon

Directions
  1. orange liqueur in a medium bowl and let stand for one hour. Preheat oven to 160°C (I use fan bake). Arrange in a well greased 6 cup baking dish (eg: a small lasagne dish). In a food processor mix milk, flour, sugar, eggs and vanilla essence until well combined. Ladle over the fruit and scatter with the raspberries (these kind of sink into the batter) and sprinkle with cinnamon.
  2. Bake for 45-50 minutes until Clafoutis is set in the centre. Dust with icing sugar and serve with lightly whipped cream.
