How to make it

  • Combine First 4 Ingredients in a Large Bowl; Toss Lightly.
  • Combine: Sugar, Oil, Vinegar, Salt, and (if you have), Dry Mustard, and Celery Seeds in a Medium Sauce Pan. Cook until Sugar Dissolves, and Sweet or tartness is to your Like.
  • Pour over Vegetables: Stir.
  • Cover & Chill. Longer this sits the more the cabbage absorbs the flavors and wilts.
  • Enjoy!

    Wow! I've never seen sugar in a coleslaw recipe before. Maybe it's an American thing. If you want to make the most of that energy-giving cabbage, you could replace the sugar with an organic apple (just chop in your food processor in a flash.) It'll be delicious! It's true most people are addicted to sugar, but couldn't we save it for an occasional dessert? It really does contribute to all of the most serious illnesses.
