Crab Cakes

- 4 slices white bread shopping list
- 2 medium carrots finely shredded shopping list
- 1 large green pepper shopping list
- 1/4 tsp ground pepper shopping list
- 1 egg lightly beaten shopping list
- 1 15oz can bread crumbs shopping list
- 3-4 heaping tbsp butter/margarine shopping list
- 1 1/2 tbsp onion chopped finely shopping list
- 1/2 tsp salt shopping list
- hot sauce to taste shopping list
- 1 lb crabmeat, drained and chopped shopping list
- vegetable oil shopping list
How to make it
- On large cookie sheet lay out bread and sprinkle with water until damp
- Press out water(you can do this on paper towels)
- Melt butter in skillet
- Saute carrots 2-3 mins
- Add onions and saute 1-2 mins
- Add green pepper and saute 1-2 mins
- Remove from heat
- Add salt, pepper and hot sauce
- Pour into large bowl
- Add egg and gently mix
- Tear bread into small pieces and toss in bowl
- Add crab
- Use your hands and mix evenly but gently
- Form mixture into cakes (2 1/2-3 inches across)
- Hold in hand and sprinkle with bread crumbs (all sides)
- Now you can fry on medium heat in some oil until brown OR
- bake in oven on 350*F for about 20 mins
- I prefer to fry in oil for about 5 minutes each side!
