Irish Bannock Recipe
A delicious breakfast loaf quite similar to a scone. Perfect for breakfast, snack or tea!

Ingredients
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 2 tbsp white sugar
  • 1/2 tsp baking powder
  • 2 tbsp butter
  • 1/2 tsp baking soda
  • 1/2 cup dried currants
  • 1/2 tsp salt

Directions
  1. Preheat oven to 375 degrees F.
  2. Mix together the flour, sugar, baking powder, baking soda, and salt. Cut butter into the mixture with a pastry cutter. Then, add buttermilk until dough becomes soft. Now, mix in the currants.
  3. Turn out dough onto a lightly floured surface and knead for about 5 minutes, until smooth. Make the dough into a 7 inch round then place on a lightly oiled cookie sheet or cake pan. Next, cut 1/2 inch deep cross side to side and score with cross 1/2 inch deep on the top.
  4. Bake for 40 minutes, and serve.
