Orange Cream Sauce For Fruit Recipe

Ingredients
  • 2 egg yolks
  • 1/2 cup sugar
  • 1 Tbsp flour
  • 1/4 tsp salt
  • 1/4 cup orange juice
  • 1/2 tsp lemon rind
  • 1/4 cup butter softened
  • 1/2 cup cream for whipping

Directions
  1. beat egg yolks with sugar in top of double boiler until thick and lemon colored.
  2. stir in flour and salt, the orange juice and lemon rind
  3. cook over simmering water, adding butter 1 Tbsp at a time-cook for 10 minutes, stirring constantly
  4. remove from heat-cool
  5. to serve: beat cream until stiff, fold in orange mixture.
