Maple-sweet Potato Cheesecake Tarts Recipe
My hubby LOVES sweet potato pie, but never like cheesecake, til I secretly made this one day, and didn't tell him is was cheesecake and he likes it LOL. Got this recipe from Diabetic cooking magazine also.

Ingredients
  • 1 pkg (8oz.) reduced fat or fat free cream cheese, softened
  • 1/2 c vanilla fat free or low fat, sugar free yogurt
  • 1 can (16oz.) sweet potatoes, drained and mashed
  • 1/2 c pure maple syrup
  • 1 tsp vanilla
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 egg
  • 1 egg white
  • 12 mini graham cracker crusts
  • 12 pecan halves (Optional)

Directions
  1. Preheat oven to 350 degrees.
  2. Beat cream cheese in medium bowl with electric mixer at medium speed until creamy.
  3. Beat in yogurt until smooth.
  4. Beat in mashed potatoes, syrup, vanilla, cinnamon, & cloves until smooth.
  5. Beat in egg & egg white until combined.
  6. Spoon sweet potato mixture evenly into crusts (about 1/3 cup per crust).
  7. Top each with pecan half (optional).
  8. Place on large baking sheet.
  9. Bake 30-35 mins or until set and knife inserted into centers comes out clean.
  10. Cool 1 hour on wire rack.
  11. Chill before serving.
  12. Top with dollop of sugar free whipped cream.
