Maple-sweet Potato Cheesecake Tarts

- 1 pkg (8oz.) reduced fat or fat free cream cheese, softened shopping list
- 1/2 c vanilla fat free or low fat, sugar free yogurt shopping list
- 1 can (16oz.) sweet potatoes, drained and mashed shopping list
- 1/2 c pure maple syrup shopping list
- 1 tsp vanilla shopping list
- 1/2 tsp ground cinnamon shopping list
- 1/4 tsp ground cloves shopping list
- 1 egg shopping list
- 1 egg white shopping list
- 12 mini graham cracker crusts shopping list
- 12 pecan halves (Optional) shopping list
How to make it
- Preheat oven to 350 degrees.
- Beat cream cheese in medium bowl with electric mixer at medium speed until creamy.
- Beat in yogurt until smooth.
- Beat in mashed potatoes, syrup, vanilla, cinnamon, & cloves until smooth.
- Beat in egg & egg white until combined.
- Spoon sweet potato mixture evenly into crusts (about 1/3 cup per crust).
- Top each with pecan half (optional).
- Place on large baking sheet.
- Bake 30-35 mins or until set and knife inserted into centers comes out clean.
- Cool 1 hour on wire rack.
- Chill before serving.
- Top with dollop of sugar free whipped cream.
