Squash Soup

- 2 Sm-Med. butternut squash (or acorn squash is what I had laying around- I nuked it in some water for 10 min.'s) shopping list
- 1 C onion shopping list
- 1 C carrots shopping list
- 1 celery Stick shopping list
- 1 clove Garlic shopping list
- 2 T olive oil shopping list
- 1 Large Green/Tart apple (or 1.5 C apple juice) shopping list
- 2-3 C chicken or vegetable stock (depending on if you use apple or juice) shopping list
- 1/4 tsp cinnamon shopping list
- 1/4 tsp nutmeg shopping list
- Pinch salt shopping list
- Pinch pepper shopping list
How to make it
- Saute diced onion, chopped carrots, diced celery and crushed garlic for 5 mins. or until they get a nice color.
- Toss in cubed squash and add remaining ingredients.
- Bring all ingredients to a boil and then reduce heat and simmer for 5mins.
- Remove from heat and puree in small batches.
