How to make it

  • Saute diced onion, chopped carrots, diced celery and crushed garlic for 5 mins. or until they get a nice color.
  • Toss in cubed squash and add remaining ingredients.
  • Bring all ingredients to a boil and then reduce heat and simmer for 5mins.
  • Remove from heat and puree in small batches.
