Machacado Con Huevo A La Mexicana Recipe
This is another classic Mexican breakfast. It features "Machacado" which is basically a dried, shredded meat.

Ingredients
  • 1/4 to 1/2 cup of Machacado (Dried Shredded Beef)
  • (You can make your own by buying some unflavored beef jerky and shredding it in a food processor.)
  • 6 eggs
  • 1/2 onion diced
  • 1 tomato diced
  • 1/4 cup chopped Cilantro (Coriander)
  • 1/2 of a Diced Serrano Pepper
  • 1 clove of Garlic (diced)
  • Salt to taste (As Machacado meat is generally salty, be careful with adding salt to this recipe. Any additional salt should be added by the individual.)

Directions
  1. Place the Onion in a skillet with some oil on medium heat and cook until tender.
  2. Add the Tomato, Serrano and Garlic and cook for 3 minutes.
  3. Add the Machacado and Eggs together and scramble until cooked.
  4. Stir in the Cilantro.
  5. Serve either as an egg scramble, or in tortillas as tacos.
