Wonderful bread that you can make out of the leftover fruits and vegis in your refrigerator, or a can of? in your pantry. Made this many times with various fruits and vegetables. Try using different combinations!

Ingredients
  • 3 cups flour
  • 1 Tbs. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 eggs
  • 2 cups sugar, brown, granulated, or a combination of both
  • 2/3 cup vegetable oil
  • 2 cups cooked, uncooked or drained canned fruits or vegetables*
  • 1 Tbs. vanilla
  • 1 cup chopped nuts
  • 1 cup raisins, or chopped dates, or dried cranberries-optional
  • *Chopped or grated uncooked apples, applesauce, apricots, mashed avocados, mashed bananas, mashed or pureed strawberries, blackberries, raspberries, blueberries, mashed cooked carrots, ground oranges, cooked pumpkin, cooked rhubarb, grated uncooked fresh or mashed cooked zucchini, ect.

Directions
  1. Preheat oven to 325 degrees. Lightly grease and flour 2 [8-1/2"x4-1/2"] loaf pans. In a medium bowl, stir together flour, cinnamon, baking soda, salt, and baking powder; set aside. In a large bowl, beat eggs, stir in sugar and oil. Stir in fruits or vegetables, and vanilla. Stir in flour mixture and nuts; stir in raisins or dates if desired. Pour batter into prepared pans. Bake 50-60 minutes or until a wooden pick inserted in the center comes out clean. Cool in pans on a rack 5 minutes. Remove from pans, cool completely on rack. Wrap in plastic and refrigerate at least overnight before cutting. Keeps up to 4 days or freeze up to 2 months.
