How to make it

  • Preheat oven to 325 degrees. Lightly grease and flour 2 [8-1/2"x4-1/2"] loaf pans. In a medium bowl, stir together flour, cinnamon, baking soda, salt, and baking powder; set aside. In a large bowl, beat eggs, stir in sugar and oil. Stir in fruits or vegetables, and vanilla. Stir in flour mixture and nuts; stir in raisins or dates if desired. Pour batter into prepared pans. Bake 50-60 minutes or until a wooden pick inserted in the center comes out clean. Cool in pans on a rack 5 minutes. Remove from pans, cool completely on rack. Wrap in plastic and refrigerate at least overnight before cutting. Keeps up to 4 days or freeze up to 2 months.
