Pan-Seared Sea Bass with Peach Salsa

- 4-6 ounce sea bass fillets shopping list
- olive oil to coat fish shopping list
- 1 large peach, chopped shopping list
- 1 large avocado, chopped shopping list
- 1/2 small red onion, diced shopping list
- 1/2 cup red bell pepper, diced shopping list
- 2 teaspoons peeled and grated fresh ginger shopping list
- 2 tablespoons fresh chopped cilantro shopping list
- 2 tablespoons olive oil shopping list
- 1 tablespoon maple syrup shopping list
- 1/2 teaspoon ground cumin shopping list
- 3 tablespoons lime juice shopping list
- 1/4 teaspoon freshly ground pepper shopping list
How to make it
- For the Salsa:
- In a medium sized bowl, combine the peach, avocado, onion, pepper, ginger and cilantro.
- In a small bowl, whisk together 2 tablespoons olive oil, maple syrup, lime juice, cumin and pepper.
- Pour the liquid mixture over the peach mixture and stir well. Refrigerate for 1 hour.
- For Fish:
- Heat pan on stove top.
- Coat fish with olive oil, and gently place in heated pan.
- Cook 5-6 minutes each side or until fish is flakey with a fork.
- note* you can also cook fish on the grill.
- When fish is done, spoon some of the salsa over the top and serve.
