How to make it

  • mash rice and cool to lukewarm.
  • Dissolve yeast in warm water and stir into rice. Cover and let rice overnight in a war place, free from drafts.
  • Add eggs, flour, sugar , salt and nutmeg to rice mixture, beating until smooth.
  • Cover and let stand in a warm place for 30 minutes.
  • Heat 3 inches of oil to 360 degress and drop by rounded tablespoonfuls into hot oil.
  • Fry about 3 minutes until golden brown, drain, sprinkle with sugar and serve immediately.
  • Makes about 2-1/2 dozen
