How to make it

  • Drain the cooked beans and rinse off any beany juices. This will work with canned beans, but we usually cook dry beans and freeze whatever's left over.
  • Put the beans in a small saucepan with a little liquid. Sprinkle over the top some oregano, cumin, and chili. I never measure, but give the top of the pan a dusting with each. Heat over medium heat until hot.
  • Chop the tomatoes and cucumbers small. Peel the cucumber if it's winter, and you'll probably also want to take the seeds out.
  • Shred the cheese. We use a food processor and a grater blade, or you could grate on a hand grater.
  • Heat the tortillas on a skillet, or a microwave if you're in a hurry.
  • Put everything in bowls or plates and bring to the table. Serve with salsa.
  • For quesadillas, take some cheese and some beans and put them on top of a heated tortilla on a skillet. Put another heated tortilla on top, and grill until the cheese is melted.
