Filet of Sole

- 4 fresh filet of sole shopping list
- 4 slices smoked salmon shopping list
- 4 cleaned fresh shrimp shopping list
- 3 ounces butter shopping list
- 1 lemon peeled and thinly sliced shopping list
- 1 tomato blanched and thinly sliced shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Dry sole between paper toweling.
- Place one slice of salmon and one shrimp on top of each filet.
- Roll filets jelly roll fashion and fasten with a toothpick.
- Heat one-half of the butter in a skillet and sauté rolled filets on all sides until brown.
- Preheat oven to 350.
- Place rolls in a baking dish and cover with foil.
- Bake 10 minutes.
- Lightly brown remaining butter.
- Remove fish from oven and garnish with lemon and tomato slices.
- Pour browned butter over fish.
