Ingredients
  • 4 fresh filet of sole
  • 4 slices smoked salmon
  • 4 cleaned fresh shrimp
  • 3 ounces butter
  • 1 lemon peeled and thinly sliced
  • 1 tomato blanched and thinly sliced
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Dry sole between paper toweling.
  2. Place one slice of salmon and one shrimp on top of each filet.
  3. Roll filets jelly roll fashion and fasten with a toothpick.
  4. Heat one-half of the butter in a skillet and sauté rolled filets on all sides until brown.
  5. Preheat oven to 350.
  6. Place rolls in a baking dish and cover with foil.
  7. Bake 10 minutes.
  8. Lightly brown remaining butter.
  9. Remove fish from oven and garnish with lemon and tomato slices.
  10. Pour browned butter over fish.
