How to make it

  • Add tapioca and orange juice to banana, and set aside.
  • In a large mixing bowl beat eggs until thick and lemon colored.
  • Beat in honey and oil, and set aside.
  • Put the arrowroot into a 1-cup measuring cup and fill the cup level with brown rice flour.
  • Empty into a bowl and add 3/4 cup more flour, salt, baking soda, and arrowroot baking powder.
  • Add banana mixture and flour mixture, alternately, to the egg mixture beginning with and ending with the flour mixture.
  • Add more flour if needed to make medium-stiff batter.
  • Stir in grated rind and nuts.
  • Spoon into a well greased 8 x 4 loaf pan.
  • Bake at 350 for 50 - 60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
  • Remove from oven and let place on a wire rack for 2 minutes to cool.
  • Turn bread over and remove pan and let bread cool.
