Ingredients
  • 1 Tablespoon quick cooking tapioca
  • 2 Tablespoons orange juice
  • 3-4 bananas, mashed
  • 2 large eggs
  • 2 Tablespoons safflower (or apricot ) oil
  • 1/4 cup honey
  • 2 Tablespoons arrowroot
  • 2 cups brown rice flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 Tablespoon arrowroot baking powder
  • 1 teaspoon grated orange rind
  • 1/2 cup chopped nuts

Directions
  1. Add tapioca and orange juice to banana, and set aside.
  2. In a large mixing bowl beat eggs until thick and lemon colored.
  3. Beat in honey and oil, and set aside.
  4. Put the arrowroot into a 1-cup measuring cup and fill the cup level with brown rice flour.
  5. Empty into a bowl and add 3/4 cup more flour, salt, baking soda, and arrowroot baking powder.
  6. Add banana mixture and flour mixture, alternately, to the egg mixture beginning with and ending with the flour mixture.
  7. Add more flour if needed to make medium-stiff batter.
  8. Stir in grated rind and nuts.
  9. Spoon into a well greased 8 x 4 loaf pan.
  10. Bake at 350 for 50 - 60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
  11. Remove from oven and let place on a wire rack for 2 minutes to cool.
  12. Turn bread over and remove pan and let bread cool.
