GF Banana Bread

- 1 Tablespoon quick cooking tapioca shopping list
- 2 Tablespoons orange juice shopping list
- 3-4 bananas, mashed shopping list
- 2 large eggs shopping list
- 2 Tablespoons safflower (or apricot ) oil shopping list
- 1/4 cup honey shopping list
- 2 Tablespoons arrowroot shopping list
- 2 cups brown rice flour shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon baking soda shopping list
- 1 Tablespoon arrowroot baking powder shopping list
- 1 teaspoon grated orange rind shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- Add tapioca and orange juice to banana, and set aside.
- In a large mixing bowl beat eggs until thick and lemon colored.
- Beat in honey and oil, and set aside.
- Put the arrowroot into a 1-cup measuring cup and fill the cup level with brown rice flour.
- Empty into a bowl and add 3/4 cup more flour, salt, baking soda, and arrowroot baking powder.
- Add banana mixture and flour mixture, alternately, to the egg mixture beginning with and ending with the flour mixture.
- Add more flour if needed to make medium-stiff batter.
- Stir in grated rind and nuts.
- Spoon into a well greased 8 x 4 loaf pan.
- Bake at 350 for 50 - 60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
- Remove from oven and let place on a wire rack for 2 minutes to cool.
- Turn bread over and remove pan and let bread cool.
