Sweet breakfast bacon. Wow. Goes great with scrambled eggs or pancakes.

Ingredients
  • 2 pounds Canadian back bacon (also called Peameal bacon)
  • 1/2 cup brown sugar
  • 1/2 tsp. dry mustard
  • 1/2 cup unsweetened pineapple juice

Directions
  1. Place bacon in a shallow roasting pan.
  2. Combine sugar, mustard and pineapple juice. Spread mixture over bacon.
  3. Bake, uncovered, at 325ºF for 1 hour, basting with the pan juices every 15 minutes.

Oh, lovely. I'm not even sure you can find that around here, the pickings can be slim, which is odd 'cause you know people in N.O. cook. Well probuley(sp) not in town, but I live in the blurbs.
