Ingredients

How to make it

  • Mix raisins, dates, margarine, sugar and water.
  • Cook for 5 minutes on high in microwave.
  • Mix in the baking soda.
  • Let it cool down.
  • Sift the flour, baking powder, salt and ginger together.
  • Mix into the above mixture.
  • Mix in the eggs, cherries, nuts and brandy.
  • Grease a microwave cake bowl.
  • Pour the mixture into the microwave cake bowl.
  • Microwave on high for about 16 to 20 minutes.
  • Turn out on wax paper.
  • Cover.
  • Let stand for 30 minutes.
  • Pour some extra brandy over to taste.
  • Serve hot or cold.
  • Freezes very well.

    There is raisins and glaced fruit mixed in the fruitcake mix. The cake is dark, not like an ordinary cake. Looks like the South African fruit cakes, but we eat it without frosting. Very nice on it's own. If you prefer frosting or anything else on top, you can definitely try it. Your cakes sound delicious aswell. When I make my fruitcake, I will post some pictures.

    Sounds good! And I don't even need an oven for it! ;) What is in the fruit cake mix? can you list the ingredients? is it just candied fruit pieces or that dark mixture we use for the Christmas mince pies? (aka fly pies) Is the cake dark brown like South African Christmas cake or light like sponge cake with fruit in when done?

    In Italy the Christmas cakes are a special white sponge cake with candied fruit in or raisins or even just plain with icing sugar sprinkled over the top! :p
