New Potato Salad with Vegetables

- SALAD shopping list
- 6 new red potatoes, unpeeled, cut into eighths shopping list
- 1 cup fresh green beans, cut into two inch pieces shopping list
- ½ red bell pepper, cut into strips shopping list
- ½ chopped yellow summer squash shopping list
- 2 small shallots, finely chopped shopping list
- ( 2 tablespoons) shopping list
- DRESSING shopping list
- 2 tablespoons tarragon white wine vinegar shopping list
- ½ teaspoon Dijon mustard shopping list
- ¼ teaspoon salt shopping list
- ¼ teaspoon coarse ground black pepper shopping list
- ¼ cup olive or vegetable oil shopping list
How to make it
- Place potatoes in medium pan. Add enough water to cover by 2 inches.
- Bring to a boil; cook 8 to 10 minutes or until just fork tender, adding green beans during last 5 minutes of cooking time.
- Drain potatoes and green beans; rinse with cold water until cool. In large bowl, combine cooked potatoes and beans with remaining salad ingredients.
- In small bowl, combine vinegar, mustard, salt and pepper. With a wire wisk, slowly beat in oil. Pour dressing over salad; toss gently to mix.
- Chill completely
