Beef Enchiladas Recipe

Ingredients
  • 2 lbs ground beef
  • 2 packets taco seasoning
  • 2 cans El Paso enchilada sauce
  • 3/4 cup water
  • 1 cup green onions, diced
  • 1 lb Mexican blend shredded cheese
  • 1 pack large burrito shells

Directions
  1. Preheat oven to 350.
  2. Cook and drain ground beef.
  3. Add water and taco seasoning mix.
  4. Spray 9X13 casserole dish with a non stick cooking spray.
  5. Fill each burrito shell with 3 spoonfuls of beef.
  6. Lightly sprinkle cheese over beef.
  7. Roll up burrito shell, place in casserole dish. Repeat.
  8. Pour enchilada sauce over enchiladas. Using spoon, make sure shells are completely drenched.
  9. Sprinkle remaining cheese on top of enchiladas.
  10. Garnish with the diced green onions.
  11. Bake in oven for 30 minutes.
  12. Serve immediately!
