How to make it

  • Preheat oven to 400
  • Cook pound of turkey burger or hamburger
  • Turn off heat and stir in 1 cup of rice and diced onion
  • Season with salt, pepper, and oregano
  • Spread sliced zucchini (and yellow squash if you like) on the bottom of a buttered casserole dish.
  • Top with burger mixture
  • Then top with cottage cheese and cream of mushroom
  • Lastly, put the cheddar cheese on top
  • Bake uncovered for 50 minutes or until cheese is almost golden brown
