How to make it

  • Fry the beef without fat in a large flameproof casserole, stirring well to seal all the sides.
  • Stir in the squash, onion & pepper and cook for a further 2 mins. Add paprika, garlic and ginger.
  • Stir in the tomatoes, corn ans stock,bring tothe boil. Cover and simmer for about 1½ hour until tender. Add the chick-peas and beans and heat thoroughly.
  • Adjust seasoning to taste.
