Jamaican Beanpot Recipe
This wonderful recipe is so easy but unbelievably tasty. It is great doubled or even trebled if cooking for a crowd. I like it served with couscous but would also be good with boiled rice

Ingredients
  • 1lb braising steak, diced
  • 1 squash ( about 1lb) pumpkin, butternut squash etc
  • 1 medium onion, chopped
  • 1 green pepper, de-seeded and sliced
  • 1 tbsp paprika
  • 2 cloves garlic, crushed
  • 1 1" piece fresh ginger, grated
  • 1 14oz can chopped tomatoes
  • 4oz baby sweetcorn ( fresh, frozen or canned)
  • 8oz beef stock
  • 1 15oz can chick-peas, drained
  • 1 15oz can kidney beans, drained
  • salt & pepper

Directions
  1. Fry the beef without fat in a large flameproof casserole, stirring well to seal all the sides.
  2. Stir in the squash, onion & pepper and cook for a further 2 mins. Add paprika, garlic and ginger.
  3. Stir in the tomatoes, corn ans stock,bring tothe boil. Cover and simmer for about 1½ hour until tender. Add the chick-peas and beans and heat thoroughly.
  4. Adjust seasoning to taste.
