The Best Mashed Sweet Potatoes Recipe
This side dish is great when served with turkey! It can also replace butter on a good warm roll or bun! Recipe supplied by Pacific Coast Farmer's Market Assosciation

Ingredients
  • 3 medium sweet potatoes (3 pounds), scrubbed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup low fat milk
  • Sea salt and freshly ground black pepper
  • 1/4 cup sun-dried cranberries
  • 1/4 cup fresh orange juice
  • 1 tablespoon maple syrup

Directions
  1. Preheat the oven to 375°F
  2. Roast sweet potatoes on a baking sheet for 1-1/2 hours
  3. Turn the sweet potatoes once to ensure even cooking
  4. Meanwhile, in a small saucepan, heat the milk, but do not boil
  5. Add the cranberries, orange juice, cinnamon, nutmeg, and salt and black pepper to taste
  6. Set aside.
  7. When the sweet potatoes are done, remove from the oven and let them cool for 15 minutes.
  8. When cool enough to handle, remove the skin
  9. Pass the sweet potatoes through a food mill or mash in a bowl with heavy-duty wire whip.
  10. In a bowl, combine the milk mixture with the sweet potatoes and mix with a large spoon.
  11. Season with salt and pepper.
  12. Add the maple syrup and serve warm.
