Sticky Toffee Pudding

- 1/4 cup unsalted butter shopping list
- 2/3 cup granulated sugar shopping list
- 1 cup flour shopping list
- 1 teaspoon baking powder shopping list
- 1 egg lightly beaten shopping list
- 2/3 cup pitted dates shopping list
- 1 cup boiling water shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon vanilla extract shopping list
- Sauce: shopping list
- 1/4 cup butter shopping list
- 1/3 cup brown sugar shopping list
- 2 tablespoons double cream shopping list
How to make it
- Lightly grease a cake pan.
- Preheat oven to 350.
- Soften butter in large mixing bowl then add sugar and cream until smooth.
- Sift flour and baking powder onto a plate.
- Beat egg with a little flour then add to creamed mixture and continue beating for a few minutes.
- Mix in the rest of the flour.
- Flour the dates lightly and chop finely.
- Put into a bowl and pour boiling water over them then mix in soda and vanilla.
- Gradually blend this mixture into the batter and mix well.
- Transfer to prepared tin and spread out evenly.
- Bake in preheated oven for 40 minutes.
- To make sauce melt butter in a small saucepan and add sugar then the cream.
- Simmer gently for three minutes.
- Cut the hot pudding into squares and cover with the sauce.
- Place under a hot grill until it bubbles taking care as this burns easily.
- Serve at once.
