An unexpected use of apples but it turns out to be one of the most tasty and refreshing soup I’ve had! The natural sweetness of the soup is pure bliss…

Ingredients
  • 1.5 litres water
  • 200-300g spare ribs or pork shoulder ribs
  • 1 onion, peeled & cut into chunks
  • 4 red apples, cut into pieces
  • 6 red dates
  • Salt

Directions
  1. Blanch the pork ribs by putting them in boiling water for a few minutes.
  2. Boil water in a pot and put in the ribs, onions, apples and red dates.
  3. Bring to boil again and turn to low heat.
  4. Simmer for 2 hours (I simmered for about an hour and keep it in thermal cooker for a few more hours).
  5. Season with salt if required.
