Corned Beef And Cabbage With Horseradish Sauce Recipe
Tried and true recipe that coems from the Holland Estate in Portland, Oregaon. This is incredible. We love it and serve it when we have company.

Ingredients
  • 5 pound corned beef brisket
  • 1 large onion stuck with 6 whole cloves
  • 6 large carrots peeled and halved
  • 8 medium potatoes washed and quartered
  • 1 teaspoon dried thyme
  • 1 small bunch parsley
  • 2 pound cabbage quartered
  • Sauce:
  • 1/2 pint whipping cream
  • 2 tablespoons mayonnaise
  • 4 tablespoon prepared horseradish

Directions
  1. Put beef in a large pot and cover with cold water then bring to boil with lid off.
  2. Add thyme, parsley and onion then turn to simmer and cook 3 hours.
  3. Skim fat from top as it rises.
  4. Add cabbage, potatoes and carrots then simmer 30 minutes until cabbage is cooked.
  5. Remove meat and cut into pieces then place on center of a large platter.
  6. Strain cabbage and season heavily with black pepper.
  7. Surround beef with cabbage, carrots and potatoes.
  8. Serve with horseradish sauce.
  9. To make sauce whip cream until it stands in peaks the fold in mayonnaise and horseradish.
