A typical lasagne but instead of Riccotta I use cottage cheese I am sure you could make it with either though.

Ingredients
  • 8 lasagne noodles cooked
  • 1 cup cottage cheese
  • frozen chopped spinach as much as you like
  • 2 eggs
  • 2-3 cups of shredded mozza
  • 1/4 cup parmesan cheese
  • 1 jar of your favorite pasta sauce
  • 1 lb lean or extra lean ground beef
  • 1 cup of mushrooms (optional)

Directions
  1. cook lasagne noodles set aside
  2. Fry up ground beef add mushrooms if you like drain
  3. add pasta sauce let simmer on stove
  4. In a seperate bowl add 1 cup mozzerella 2 eggs cottage cheese and chopped spinach mix well
  5. put 1 part sauce in pottom of casseole dish ,next put 4 noodles down,add cottage cheese mixture then another layer of meat sauce
  6. add 4 more lasagne noodles and the last layer of meat sauce
  7. add the rest of the mozza cheese and then sprinke parmesan over top
  8. cover with foil and bake in a 375 degree oven for 45 min
  9. uncover and bake for 15 minutes more until cheese is bubbly
