The Orange And Gold Recipe
This recipe comes from the Abs-diet book. I have no idea why it has the name that it does. The only change that I have made is to increase to four servings instead of the one serving that the book has.

Ingredients
  • 2 Tbs. olive oil
  • 1 tsp. red pepper flakes
  • 1 lb. boneless, skinless chicken breasts cut into small pieces
  • 1 1/3 C. matchstick carrots ( I usually do 3-4 medium)
  • 1 1/3 C. thinly chopped celery (about 2-3 ribs)
  • 4 green onions, sliced (use all but the roots)
  • 8 Tbs. chopped unsalted roasted peanuts
  • 1 Tb. Hoisin sauce
  • 4 C. cooked brown rice

Directions
  1. Combine the oil and pepper flakes in a large skillet over medium heat.
  2. Add the chicken and cook 2-3 minutes, stirring frequently.
  3. Add the carrots, celery, green onions and peanuts and cook until the veggies start to soften.
  4. Add the Hoisin sauce and heat through.
  5. Serve over 1 C. brown rice per person.
