Irish Soda Bread GF

- 3 cups light GF flour (Orgran Buckwheat pancake mix or Basco Multi Purpose Mix) shopping list
- 1-1/2 teaspoons baking soda shopping list
- 1-1/2 teaspoons salt (or sugar if making a sweet variety) shopping list
- 1-1/2 teaspoons xanthan gum shopping list
- 1-1/2 cups buttermilk shopping list
How to make it
- Stir dry ingredients together
- Make a well in the centre and add 1 cup of the buttermilk, reserving 1/2 cup
- Combine dry ingredients and buttermilk with a fork, gradually adding more of the reserved liquid until a soft dough is formed
- At this point you can transfer it to a bread machine if desired
- If working by hand, knead the dough lightly on a floured surface for 1 minute
- Place in appropriate tin (either round or loaf)
- Bake in 180 deg C oven for 40-45 minutes until it is golden brown on top and sounds hollow when tapped
