Fresh Peach Cobbler Recipe
Another great recipe from my late mother-in-law. She was a fantastic gardener, canner, baker and cook. I was lucky to inherit all of her wonderful recipes. This was one she made every summer when her peaches were plentiful. Enjoy

Ingredients
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground cumin
  • 4 cups peeled fresh peaches
  • 1 teaspoon lemon juice
  • 1 cup flour
  • 1 tablespoon sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons shortening
  • 1/2 cup milk

Directions
  1. Heat oven to 400.
  2. Mix 1/2 cup sugar, cornstarch and nutmeg in a saucepan.
  3. Stir in peaches and lemon juice.
  4. Cook over medium heat until mixture thickens and boils.
  5. Boil and stir 1 minute.
  6. Pour into ungreased casserole dish.
  7. Stir together flour, baking powder, 1 tablespoon sugar and salt.
  8. Add shortening and cut through with a fork until flour clings to shortening then add milk.
  9. Form into a ball.
  10. Drop mixture by teaspoonsful onto hot fruit.
  11. Bake 30 minutes.
  12. Serve with whipped cream or vanilla ice cream.
