How to make it

  • In a food processor or blender combine the cilantro, scallions, lime juice, coconut, jalapeno, cumin, 1/2 teaspoon of the salt and black pepper.
  • Add 1/4 cup water and process until the green curry paste is smooth and well combined.
  • In a medium saucepan combine rice, 2 tablespoons of the green curry paste, 2-1/2 cups water, turmeric and the remaining 1/4 teaspoon salt.
  • Bring to a boil then reduce to a simmer.
  • Cover and cook 17 minutes.
  • Preheat grill to a medium heat then hen spread remaining green curry paste on the skinless side of the fish.
  • Spray the rack with nonstick cooking spray.
  • Grill fish skin side down for 5 minutes.
  • Serve immediately.
