Striped Bass with Green Curry Sauce

- 1/2 cup packed fresh cilantro leaves shopping list
- 2 scallions cut into large pieces shopping list
- 2 tablespoons fresh lime juice shopping list
- 3 tablespoons flaked coconut shopping list
- 1 large jalapeno pepper sliced shopping list
- 1-1/2 teaspoons ground cumin shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 cup long grain rice shopping list
- 1 teaspoon turmeric shopping list
- 4 striped bass fillets with skin on and any visible bones removed shopping list
How to make it
- In a food processor or blender combine the cilantro, scallions, lime juice, coconut, jalapeno, cumin, 1/2 teaspoon of the salt and black pepper.
- Add 1/4 cup water and process until the green curry paste is smooth and well combined.
- In a medium saucepan combine rice, 2 tablespoons of the green curry paste, 2-1/2 cups water, turmeric and the remaining 1/4 teaspoon salt.
- Bring to a boil then reduce to a simmer.
- Cover and cook 17 minutes.
- Preheat grill to a medium heat then hen spread remaining green curry paste on the skinless side of the fish.
- Spray the rack with nonstick cooking spray.
- Grill fish skin side down for 5 minutes.
- Serve immediately.
