Striped Bass With Green Curry Sauce Recipe
If you love bass this is a fabulous recipe. Especially good with grilled vegetables and a fruit salad along side.

Ingredients
  • 1/2 cup packed fresh cilantro leaves
  • 2 scallions cut into large pieces
  • 2 tablespoons fresh lime juice
  • 3 tablespoons flaked coconut
  • 1 large jalapeno pepper sliced
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup long grain rice
  • 1 teaspoon turmeric
  • 4 striped bass fillets with skin on and any visible bones removed

Directions
  1. In a food processor or blender combine the cilantro, scallions, lime juice, coconut, jalapeno, cumin, 1/2 teaspoon of the salt and black pepper.
  2. Add 1/4 cup water and process until the green curry paste is smooth and well combined.
  3. In a medium saucepan combine rice, 2 tablespoons of the green curry paste, 2-1/2 cups water, turmeric and the remaining 1/4 teaspoon salt.
  4. Bring to a boil then reduce to a simmer.
  5. Cover and cook 17 minutes.
  6. Preheat grill to a medium heat then hen spread remaining green curry paste on the skinless side of the fish.
  7. Spray the rack with nonstick cooking spray.
  8. Grill fish skin side down for 5 minutes.
  9. Serve immediately.
