Cinnamon Apple Cashew Parfait

- 2 red apples (make sure they are suitable for cooking, I like cameos) shopping list
- 1/2 c cashews shopping list
- 1/2 c whipping cream shopping list
- 1/4 cup sugar shopping list
- a small pat of butter shopping list
- 1 tsp light flavored oil, like canola shopping list
- pinch of salt shopping list
- 1/4 c granola shopping list
- 1/4 plus 1/8 tsp cinnamon shopping list
- a few shakes of nutmeg shopping list
- 1/8 tsp cayenne shopping list
- a (large) pinch of salt shopping list
- 1 cap full of vanilla extract shopping list
How to make it
- Peel, core and dice the apples 1/2" is a good size, smaller is ok too.
- in a saute pan, over medium high heat add the apples, granola, butter, half the sugar 1/4 tsp of cinnamon and the nutmeg and cook until warmed through and tender.
- Set aside.
- Chop or crush the cashews until you have small chunks about the size of a pea.
- In a saucepan, add the oil, cashews, the rest of the sugar, the salt, 1/8 tsp of the cinnamon, and the cayenne.
- Heat over medium heat and keep stirring. When you see everything kind of come together in little chunks, remove from heat. Its very easy to burn cashews so be careful.
- Mix the whipping cream and vanilla untill light and frothy.
- layer all of the components in a parfait glass or martini glass and serve immediately.
- Enjoy.
