Ingredients
  • 1-1/2 lbs. ground beef (chili ground is best)
  • 1 lb. pork sausage
  • 1 sm. onion, chopped
  • 1 clove garlic, crushed
  • 1 8-oz can tomato sauce
  • 1 15 oz. can crushed tomatoes
  • 2 cups water
  • 1 cup canned refried beans
  • 1 can ranch-style beans (or pinto beans)
  • 4 tbsp. ground ancho chile powder
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. paprika
  • dash cayenne pepper, to taste
  • 2 tbsp. brown sugar
  • 1 tsp. salt

Directions
  1. In a Dutch oven, brown meat; drain fat. Add onion and garlic, and cook until onion is translucent. Add remaining ingredients. Simmer at least 30 minutes - better if cooked longer.
  2. If you use blended chili powder (which already contains cumin and oregano), you may need to decrease the amount of the other spices.

Sounds good, must give that a try, I have lots of good chili recipes that I've made but your right it's all in the correct seasonings, looks like you have them down pat. Great post.


I made some (very similar) chili recently but I also included chopped bell pepper and chopped celery ( the rest of "the Trinity")... Caju-Mex style... turned out very good and I thought of y'all.
p.s. has some as "Frito Pie", and that was particularly good.
