Smoked Turkey Wings And Coucous Soup

- 1 large package smoked turkey wings or necks or both shopping list
- I used my biggest spaghetti pot with the insert shopping list
- 1 lb of fresh or 2 to 3 boxes of chopped spinach shopping list
- 2 xtra large carrots shopping list
- bunch of cilanto - washed de-stemmed and cut in chiffonade style shopping list
- NO salt shopping list
- 1 box coucous shopping list
How to make it
- Place turkey and scubbed carrots (whole) into insert
- Replace insert into pot
- Add 2 cans chicken broth and water to as high as you think is safe
- and will not boil over
- Bring to boil and lower immediately to med-low or low
- Add chiffonade of cilantro
- Steam spinach in another pot and when cool squeeze the dickens out of it and set aside
- Monitor soup every 15 minutes and if water is boiling away add either water or broth to keep as much water as possible
- After an hour raise heat to medium and remove carrots with tongs
- cool and chop into nice even little squares
- put aside
- turn off soup remove from hot burner
- remove insert with turkey
- when you are able to touch the bones remove meat
- add to bowl with carrots
- When couscous is done (add broth if needed to bring to the consistency you like)
- Carrots and meat into the pot with two turns of the pepper mill
- Toast crispy bread and but one piece on bottom of eachh serving dish
- Place soup in warmed serving bowl and serve piping hot
- Soup is smokey tasting and filling so only a light green salad if you wish.
- Hope you like it.
- Sprinkle grated cheese on top of toast
- Stir in spinach
- wait 5 minutes
- Pour in box of couscous
- Stir
