How to make it
- Shred the carrots, either with a shred blade on a food processor or with a hand grader. You are after long shreds, not chunks. Put the carrots in a bowl.
- Splash some lemon juice and apple cider vinegar on top. You are looking to end up with a little liquid in the bottom of the bowl when you're done, but not soup. I never measure.
- Sprinkle tarragon on top for flavor and color.
