This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gardner Estate in Frisco, Texas in 1994.

Ingredients
  • 1 pound red kidney beans soaked overnight in water
  • 1-1/2 cup white rice
  • 16 ounce can stewed tomatoes
  • 1 ham hock
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 white onion chopped
  • 2 clove garlic
  • 1 teaspoon white pepper
  • 1 teaspoon salt

Directions
  1. Mix all ingredients except rice together and place in crock pot.
  2. Cook for 6 hours on low.
  3. Add rice during final 2 hours of cooking.
