Armenian Beans Dated 1964

- 2 small white onions, sliced shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 pound green string beans, cut into 1-inch pieces shopping list
- 1 medium eggplant peeled and cut into 1/2-inch cubes shopping list
- 1 large can tomatoes shopping list
- 1 teaspoon salt shopping list
- 1/2 cup French dressing shopping list
How to make it
- Separate onion into rings and fry in olive oil until golden brown.
- Add string beans, eggplant and tomatoes then cover and simmer 30 minutes.
- Uncover and add salt.
- Cook until beans are tender and most of the liquid has evaporated.
- Pour into a bowl and chill thoroughly then add dressing.
