Mini Meatloafs Recipe
I found this recipe in a Kraft Recipe magazine. I love it because it makes great lunches.

Ingredients
  • 1 lb Ground Beef
  • Pizza Sauce, Ragu or other tomato sauce
  • Grated mozzarella, cheddar, montoray jack, or any kind of cheese
  • Stove top stuffing - 1 package
  • 1 egg

Directions
  1. In a large bowl mix ground beef, stove top stuffing, and egg. You can also add salt and pepper to taste.
  2. Roll beef mixture into balls and place each ball into greased muffin tin.
  3. Using your thumb to make a dent in each meat ball and add one spoonful of tomato sauce.
  4. Bake for 15 minutes. Add cheese to top of each meatloaf and bake for an additional 5 minutes.
  5. You can use a knife or toothpick to test for doneness.
  6. I use different cheese and sauce combinations for different tastes.
  7. Mozzerella and Ragu - Italian
  8. Montoray Jack and you can add some taco seasoning to the meat for a Mexican twist.
  9. This is a really easy recipe to alter to your taste. I love it because I can make little meatloafs ahead of time for my work lunches!
