This salad dressing has a fabulous, garlicky flavor. Not only is it very easy to make, it only takes a few minutes to make. After you have made your own salad dressings you will never use store bought ones again.

I used some minced shallot (probably about 2 garlic cloves worth). I think it gives a warm, aromatic flavor without the punishing heat and spice of raw garlic. Some fresh oregano (admittedly quite a bit more than the recipe called for, but that's a bad habit of mine when it comes to fresh herbs) rounded out the dressing beautifully.
