Arkansas Carbonara Aka Bacon Hash

- 2 strips bacon, diced fairly fine shopping list
- 1 small potato, diced about 3/16 to 1/4" shopping list
- salt & pepper to taste shopping list
- 35% (Whipping) Cream shopping list
- Grated parmesan cheese, to taste (the "Carbonara taste) shopping list
- toasted white or whole-grain bread shopping list
- Optional shopping list
- "a handful" chopped green onions shopping list
- OR minced onion, to taste. shopping list
- 2 eggs shopping list
How to make it
- - Fry Bacon bits until done but not completely crisp.
- - Add chopped potato (and minced onion, if desired).
- - Season with salt and pepper to taste.
- - Stir/flip occasionally to get all sides of potato started cooking.
- - Pour off excess fat.
- - Pour in whipping cream to almost cover meat and potatoes.
- - Sprinkle with Parmesan, if desired.
- - If you want, and didn't add onion earlier, add a handful of chopped green onion and stir in.
- - Continue cooking to reduce by about 1/2 to 2/3.
- - Serve over toast.
- - Top or side with fried or scrambled eggs.
