How to make it

  • - Fry Bacon bits until done but not completely crisp.
  • - Add chopped potato (and minced onion, if desired).
  • - Season with salt and pepper to taste.
  • - Stir/flip occasionally to get all sides of potato started cooking.
  • - Pour off excess fat.
  • - Pour in whipping cream to almost cover meat and potatoes.
  • - Sprinkle with Parmesan, if desired.
  • - If you want, and didn't add onion earlier, add a handful of chopped green onion and stir in.
  • - Continue cooking to reduce by about 1/2 to 2/3.
  • - Serve over toast.
  • - Top or side with fried or scrambled eggs.
