  • 4 washed eggs

Directions
  1. First bring water in a saucepan to almost boiling.
  2. If the water is already boiling, lower the heat until it is no longer boiling.
  3. Add a couple teaspoons of vinegar to the water.
  4. Vinegar allows the egg whites to congeal more easily.
  5. Working with the eggs one by one, crack an egg into a small cup, then place the cup near the surface of the hot water and gently drop the egg into the water.
  6. With a spoon, nudge the eggwhites closer to their yolks.
  7. This will help the egg whites hold together.
  8. Use slotted spoon to lift any eggs up from sticking to the bottom of the pan.
  9. Turn off the heat. Cover.
  10. Let sit for 3-4 minutes, until the egg whites are cooked.
  11. Lift eggs out of pan with a slotted spoon.
  12. One trick to make the eggs stay somewhat contained is to take a ring from a mason jar and place it in the pan.
  13. Drop the egg over the mason jar ring and let it settle in the ring, then turn off the heat and cover.
  14. Alternatively, the truly easiest way to make poached eggs is with an egg poacher.

I love poached eggs, but could never make them. The vinegar would explain that... I must try to do it again now that I have seen this!
